Organic food demand is growing 30% per year in Israel and it is becoming an important sector of the industry. I was involved in the early development of the sector, when "organic" recycling of wastewater for irrigation was considered and planned. I was very skeptical of the whole organic craze, I thought it a passing craze, unscientific and mystical. Yet, from an objective point of view, I was wrong, I didnt see it coming.
